For one reason or another, Bethesda didn't want to make the effort to expand on the language more than its around 650-word lexicon. We don't know why for certain, but it's a good probability that they just didn't want to make the effort in order to save that energy for other aspects of the game it's featured in.

Because Dovahzul doesn't have exact word matches, you can rely on certain word constructs in Dovahzul to get what you want. Birds can be raanneseviing (animals of the wing). Gryphons can just be "Griffin" since it's technically just a loan word from Greek. In context to the Elder Scrolls world lore, gryphons might have a different word origin, but people of THIS world will understand griffin just fine. Insects can be described as lirseviing (worm of the wing), although you would probably have to further describe the insect anyway.
