On the topic of Strunkiin

Are most adjectives like "-born", added on to words or names like such; or is it just occasional?

In the game we got, there's only one usage of "-born" and it doesn't include a hyphen -- Dragonborn (dovahkiin). As I mentioned in my other post, there are word walls in the game Skyrim that have hyphenated names for people. Those are called "bynames" (has Old Norse actually did this as well as other cultures -- https://www.nordicnames.de/wiki/Old_Norse_Bynames) They describe people. Some examples in Skyrim are Fjolmod Bein-Su (Fjolmod the Foul-Air. referring to stench), Laknir Mal-Tu (Laknir Small-Hammer, referring to ... pretty vague, but you can use your imagination -- word wall tells that this person had an Argonian servant/workman), Yngnavar Gaaf-Kodaav (Yngnavar Ghost-Bear).

If you say "Strun-Kiin", then in-game someone would understand it as an attribute of your personality or character. "Strunkiin", on the other hand, would most likely be understand as family/tribe name. Also if you remember, "Battleborn" is a prominent family in Whiterun.
