What does that mean?

"Vanilla" means the original, unmodded version. 

Skyrim is the "plain" Vanilla ice cream, and mods are the chocolate chips on top.  You can eat the ice cream without them, some may not even like 'em.  But to others they're a nice topping that they always get.
